Zucchini Slice Recipe

Following a recent glut of zucchini in the garden our family has been living off this sometimes forgotten favorite - zucchini slice. 

Ingredients

2 zucchini grated
1 onion finely chopped 
3 rashers bacon finely chopped
1 cup of corn
1 cup tasty cheese grated
1 cup SR flour
½ cup of oil
5 eggs
salt/pepper to taste

Method

1. Preheat oven to 170°C, grease and line a slice tin.
2. Saute onion and bacon in a pan.
3. Mix zucchini, onion, bacon, flour, cheese, oil, and eggs. Pour into the tin.
4. Season, bake for 35-40 mins, cool before cutting.
